  • 1 1/3 c. yellow cornmeal
  • 3/4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 Tbsp. flour
  • 1 tsp. salt
  • 2 eggs
  • 1 (16 oz.) can cream-style corn
  • 1 1/3 c. buttermilk

Directions

    Combine all items for cornbread mixture.

    Put grease in large skillet (cover bottom).

    Heat to 350°.

    Saute, with 3 teaspoons bacon fat or grease, a large onion, chopped fine, 3 fresh jalapeno peppers, seeded and chopped and a bell pepper, seeded and chopped fine.

    Add 1 pound ground chuck.

    Brown all and season with black pepper and salt.

    Drain fat.

    Pour 1/2 of cornbread mixture into heated skillet.

    Add meat mixture.

    Add 1/2 pound grated Cheddar cheese.

    Top with remaining cornbread mix.

    Bake at 350° for 40 to 45 minutes.
