- 1 1/3 c. yellow cornmeal
- 3/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1 Tbsp. flour
- 1 tsp. salt
- 2 eggs
- 1 (16 oz.) can cream-style corn
- 1 1/3 c. buttermilk
Directions

1Combine all items for cornbread mixture.

2Put grease in large skillet (cover bottom).

3Heat to 350°.

4Saute, with 3 teaspoons bacon fat or grease, a large onion, chopped fine, 3 fresh jalapeno peppers, seeded and chopped and a bell pepper, seeded and chopped fine.

5Add 1 pound ground chuck.

6Brown all and season with black pepper and salt.

7Drain fat.

8Pour 1/2 of cornbread mixture into heated skillet.

9Add meat mixture.
-
10Add 1/2 pound grated Cheddar cheese.

11Top with remaining cornbread mix.

12Bake at 350° for 40 to 45 minutes.
