Mexican Cornbread

  • 1 pkg. Mexican cornbread mix
  • 1 pkg. yellow cornbread mix
  • 1 box frozen broccoli
  • 12 oz. cottage cheese
  • 1 stick butter or margarine
  • 1/2 c. Cheddar cheese, shredded
  • 1/4 to 1/2 c. milk
  • 4 eggs (add last, one at a time)

Directions

    Mix all ingredients.

    Put into hot, greased cast-iron skillet. Bake at 350° for 30 minutes.

    Take out and sprinkle cheese on top.

    Continue baking for 10 to 15 minutes, until done.
