  • 3 c. self-rising corn meal mix
  • 3 eggs
  • 1/2 c. oil
  • 1 can cream-style corn
  • 3 or 4 hot banana peppers
  • 1 large onion
  • 1 1/2 c. buttermilk
  • 1 1/2 c. chopped Cheddar cheese

    Chop fine the pepper and onion.

    Mix meal, eggs and oil.

    Add buttermilk, corn, cheese, pepper and onion.

    Mix well.

    Bake in iron skillet at 450° for 25 to 30 minutes.
