- 1 lb. ground beef
- 1 c. yellow corn meal (self-rising)
- 2 eggs, well beaten
- 1 c. sweet milk
- 1/2 lb. Cheddar cheese, grated
- 1 (No. 303) can cream-style corn
- 1/4 c. bacon drippings
- 1 large onion, chopped
- 1/2 to 3/4 tsp. ground red pepper (cayenne)
Directions

1Saute beef and drain on paper towels.

2Combine meal, eggs, milk, corn and bacon drippings.

3Grease large iron skillet; heat. Sprinkle with a light layer of meal and brown slightly.

4Put half of meal mixture in skillet.

5Layer with cheese, meat, onions and pepper.

6Pour remaining batter on top.

7Bake 45 to 50 minutes at 350°.
