  • 2 eggs, beaten
  • 1 c. whole kernel cream-style corn
  • 3 tsp. baking powder
  • 1 c. sour cream
  • 2/3 c. salad oil
  • 1 c. yellow cornmeal
  • 1 1/2 tsp. salt
  • 1 small can green jalapeno peppers
  • 1 c. grated Cheddar cheese

Directions

    Combine first 7 ingredients.

    Mix well.

    Pour half of batter in 9-inch pan.

    Seed jalapeno peppers and cut open one side.

    Lay flat on top of batter and sprinkle with 1/2 cup of grated cheese. Top with remaining batter and sprinkle with 1/2 cup grated cheese. Bake for 1 hour in 350° oven.
