- 1 pkg. Mexican cornbread mix
- 1 small onion, grated
- 8 to 12 oz. grated Cheddar cheese
- 3 eggs, beaten
- 1 c. milk
- 1 can Mexicorn
Directions

1Preheat oven to 350°.

2Season beef.

3Saute in skillet; drain and set aside.

4Combine rest of ingredients; mix well.

5Spoon half of batter into a greased 2-quart casserole dish.

6Place cooked beef over top of batter.

7Top with remaining batter.

8Bake at 350° for 45 minutes or until done.
