- 1 lb. ground beef
- 1 large onion, chopped
- 2 1/2 c. water
- 1 c. uncooked rice
- 3 beef bouillon cubes, crushed
- 1/2 tsp. dry mustard
- 1 medium green pepper, chopped
- 1 medium tomato, chopped
- 1 c. shredded Monterey Jack cheese
Directions

1Brown beef with onion in 10-inch skillet; drain off fat.

2Stir in water, rice, crushed bouillon cubes and dry mustard.

3Bring to boil.

4Reduce heat, cover and simmer until liquid is absorbed, about 25 minutes.

5Stir in green pepper and tomato.

6Sprinkle cheese over top.

7Cover and remove from heat.

8Let stand 2 to 3 minutes to melt cheese.

9Makes 4 to 6 servings.
