Ingredients

  • 1 1/2 c. self-rising cornmeal
  • 1 can creamed corn
  • 1 c. grated Cheddar cheese
  • 1 lb. ground beef or sausage, seasoned, cooked and drained
  • 1/2 c. onion
  • 1/2 c. chopped bell pepper
  • 1/3 c. cooking oil
  • 2 eggs
  • 1/2 tsp. red pepper
  • dash of salt
  • 1/2 tsp. soda
  • enough buttermilk to mix

Directions

    Mix all ingredients except cheese and meat.

    Pour 1/2 mixture into greased hot skillet.

    Spread 1/2 cup cheese over mixture. Sprinkle remainder of cheese over meat.

    Add remaining batter. Bake at 350° at least 45 minutes.
