- 1 1/2 c. self-rising meal
- 1/3 c. oil
- 3 eggs
- 1/2 tsp. salt
- 1 (8 oz.) can creamed corn
- 1 large jalapeno pepper, chopped
- 1/2 green pepper, chopped
- 1/2 c. grated Cheddar cheese
- 1 c. milk (sweet or butter)
Directions

1Mix all ingredients except cheese.

2Pour half of batter into greased and heated skillet, then pour the cheese into the skillet.

3Cover with the rest of the batter.

4Bake at 375° for about 45 minutes or until brown.

5I use an 8-inch square pan and do not preheat.
