- 1 1/2 c. cornmeal
- 1 c. sour cream or buttermilk
- 1 tsp. salt
- 2 Tbsp. minced bell pepper
- 1 c. cream-style corn
- 2/3 c. salad oil
- 2 eggs
- 2 jalapeno peppers, minced
- 1 c. grated cheese
Directions

1Mix in order listed but not cheese.

2Pour half of mixture into a hot greased pan (iron skillet).

3Sprinkle half of cheese on this; add remaining mixture.

4Cover with cheese.

5Bake at 350° for 35 to 40 minutes.

6This will make a 10 1/2-inch round skillet; don't make too thick.
