- 1 c. cornmeal
- 1 c. buttermilk
- 2 eggs
- 1/2 c. bacon drippings
- 1/2 tsp. salt
- 3/4 tsp. baking soda
- 1 medium onion
- 1/2 red bell pepper, chopped fine
- 1/2 can cream-style corn
- 1/2 lb. grated cheese
Directions

1Mix all ingredients except the grated cheese.

2Pour half the batter into a large iron skillet which has been greased.

3Sprinkle grated cheese over skillet mixture and add remaining batter.

4Bake at 400° until golden brown.
