  • 2 c. cornmeal
  • 1/2 c. flour
  • 1/2 lb. sausage, cooked and crumbled
  • 1 small can cream-style corn
  • 1 small onion, chopped
  • 1 jalapeno pepper, diced
  • 1 stick margarine
  • 4 eggs
  • 1 small potato, grated
  • 6 oz. grated cheese

Directions

    Saute sausage, onions and pepper together in skillet; drain. Mix cornmeal and flour in a large bowl; add sausage, onion and pepper, corn, potato, cheese and eggs. Melt butter and pour into mixture. Stir well. Bake in a large iron skillet in a preheated 375° oven for about 30 minutes or until done.
