- 1 c. yellow corn meal
- 2 well beaten eggs
- 1 c. milk
- 1/2 tsp. soda
- 1/2 tsp. salt
- 1 (No. 303) can creamed corn
- 2 jalapeno peppers, cut in small bits
- 1 lb. ground beef
- 1 large onion
- 1/2 lb. cheese
Directions

1Mix the first 7 ingredients and set aside.

2Brown the ground beef and drain.

3Cut up the onion and grate the cheese.

4Pour half of the meat in skillet.

5Pour half of the corn meal mixture over the meat.

6Sprinkle all the cheese on the batter.

7Sprinkle the other half of the meat.

8Next add all the onion and then cover with remaining half of the batter.

9Bake at 350° for 50 minutes.
