Ingredients

  • 1 c. yellow corn meal
  • 2 well beaten eggs
  • 1 c. milk
  • 1/2 tsp. soda
  • 1/2 tsp. salt
  • 1 (No. 303) can creamed corn
  • 2 jalapeno peppers, cut in small bits
  • 1 lb. ground beef
  • 1 large onion
  • 1/2 lb. cheese

Directions

    Mix the first 7 ingredients and set aside.

    Brown the ground beef and drain.

    Cut up the onion and grate the cheese.

    Pour half of the meat in skillet.
  5. 5
    Pour half of the corn meal mixture over the meat.

    Sprinkle all the cheese on the batter.

    Sprinkle the other half of the meat.

    Next add all the onion and then cover with remaining half of the batter.

    Bake at 350° for 50 minutes.
