- 1/2 c. self-rising flour
- 2 c. self-rising cornmeal
- 1 large chopped onion
- 2 large chopped jalapeno peppers
- 2 eggs
- buttermilk to make a loose batter
- 1/4 c. hot oil
- 8 oz. grated Cheddar cheese
- 1 can cream-style corn
Directions

1Preheat oven to 450°.

2Heat oil in large iron skillet; set aside.

3Mix in a large bowl: cornmeal, flour, eggs, creamed corn, grated cheese, hot peppers, onion and buttermilk to make the loose batter.

4Add hot oil.

5Sprinkle skillet with cornmeal.

6Pour batter into skillet.

7Bake until brown on top.

8Cool.

9Loosen edge with knife.
