- 3/4 c. flour
- chopped onion (optional)
- 2/3 c. cooking oil
- 1 c. sour cream
- 1 c. cream-style corn
- 3 tsp. baking powder
- 1 tsp. salt
- 2 Tbsp. sugar
- 1 c. grated Cheddar
- 3 finely chopped jalapeno peppers
Directions

1Sift dry ingredients twice; add everything but cheese.

2Pour half of batter into greased pan or skillet; sprinkle half cheese on top.

3Add remaining batter and top with remaining cheese.

4Bake at 425° for about 30 minutes.
