  • 1 1/2 c. self-rising cornmeal
  • 1 c. milk
  • 1 egg
  • 1 small can cream-style corn
  • 1 chopped onion
  • 3 jalapeno or chili peppers
  • 1/2 c. vegetable oil
  • 3/4 c. grated cheese
  • chopped bell pepper and celery (may be added)

Directions

    Combine all ingredients.

    Bake in greased casserole at 400° for 45 minutes.

    This may be baked in a large ring mold and filled with beef stew, chili or chicken a la king.
