Mexican Cornbread

  • 1 c. cornmeal
  • 1/2 tsp. soda
  • 1/2 tsp. salt
  • 3/4 c. sweet milk
  • 2 eggs
  • 1 onion, chopped fine
  • 1 can cream-style corn
  • 1/4 c. bacon drippings
  • 2 or 3 jalapeno peppers, chopped
  • 1 lb. ground meat, browned
  • 1/4 c. grated cheese

Directions

    Mix cornbread; put half in bottom of pan or skillet.

    Put browned meat and cheese, then put other half of cornbread on top. Bake at 350° for about 45 minutes.
