Mexican Cornbread

Ingredients

  • 1 c. corn meal
  • 1/2 tsp. soda
  • 1/2 tsp. salt
  • 2 eggs, beaten
  • 1 c. milk
  • 1 can creamed corn
  • 1/4 c. oil
  • 1 lb. cooked ground beef
  • 1 large, chopped onion
  • 4 pods jalapenos, chopped
  • 1/2 lb. grated Cheddar cheese
  • 1/4 c. oil

Directions

    Cook meat and onion well and drain.

    Heat a large iron skillet and add 1/4 cup of oil.

    Sprinkle corn meal in bottom of pan to keep cornbread from sticking.

    Pour 1/2 of the cornbread mixture in bottom of pan, then layer meat, jalapenos and cheese.

    Pour remaining cornbread mixture on top and bake in a 350° oven for 45 minutes.
