- 2 1/2 c. self-rising cornmeal
- 1 1/2 c. flour
- 2 eggs
- 6 Tbsp. cooking oil
- milk
- 3 1/2 lb. ground beef
- 2 large onions, chopped
- 5 hot peppers
- 1 large bell pepper, chopped
- 1 1/2 lb. Cheddar cheese, grated
Directions

1Mix first five ingredients together, except use only enough milk to make a muffin consistency.

2Add 2 cans of creamed corn. Put 1/2 of the mix in baking pan.

3Cook ground beef in small amount of water and drain.

4Layer beef, onion, hot peppers, bell pepper and cheese on top of cornmeal mixture.

5Add the rest of cornmeal mixture on top.

6Bake at 350° for 50 to 60 minutes.
