Mexican Cornbread

  • 2 pkg. cornbread
  • 1 small can creamed corn
  • 2 c. shredded Cheddar or Jack cheese
  • 1 can refried beans
  • 3/4 to 1 lb. ground beef
  • 1 envelope taco seasoning
  • 1 Tbsp. medium hot picante sauce
  • 1 small onion

Directions

    Brown meat and onion; drain.

    Stir in taco seasoning per directions.

    Add can of refried beans to mix.

    Let simmer. Combine cornbread mixes per directions.

    Add 1/2 can creamed corn and picante sauce to mixture.

    Pour 1/2 cornbread into lasagna pan; top with all meat and bean mixture and cheese.

    Pour remaining cornbread on top.
