Mexican Cornbread

Ingredients

  • 1 c. corn meal
  • 2 eggs
  • 1 c. milk
  • 1/2 c. oil or bacon drippings
  • 1 c. cream-style corn
  • 1 lb. hamburger
  • 1 large onion, chopped
  • 1/2 lb. Longhorn cheese, chopped
  • 2 or 3 jalapeno peppers, chopped

Directions

    Mix first 5 ingredients and set aside.

    Brown hamburger and drain.

    Oil large skillet or pan.
  4. 4
    Pour in 1/2 of corn meal mixture.

    Sprinkle hamburger, onions, peppers and cheese on top and then pour remainder of corn meal on top.

    Bake at 400° for 40 to 45 minutes until brown and done in middle.
