- 1 c. buttermilk
- 1 1/2 c. self-rising cornmeal
- 3 eggs, beaten
- 1/2 c. oil
- 1 c. cream-style corn
- 1/2 large green pepper, finely chopped
- 1 large onion, chopped
- 1 small hot red pepper, chopped
- 1 c. grated sharp Cheddar cheese
Directions

1Combine all ingredients except cheese and pour half of batter in 8-inch square pan (greased).

2Cover with cheese.

3Pour remaining batter over cheese.

4Bake in preheated oven at 400° for 35 to 45 minutes or until golden brown.
