Mexican Cornbread Casserole

  • 1 lb. ground beef or chuck
  • 1/4 c. fine chopped onions
  • 1 Tbsp. finely chopped jalapenos
  • 2 eggs, beaten
  • 1 large can creamed corn
  • 1 Tbsp. sugar
  • 1/4 tsp. Accent
  • salt and pepper to taste
  • 2/3 c. milk
  • 1 pkg. cornbread mix
  • 4 slices American cheese

Directions

    Brown beef and drain; add salt, pepper and jalapenos.

    Combine corn, Accent and onion in corn can.

    Mix 1 cup corn and eggs into cornbread mix until moistened.

    Pour 1/2 cornbread mix into greased 8 or 9-inch square pan.

    Sprinkle on meat, then cheese, then remaining corn.

    Bake at 375° for 40 to 45 minutes or golden brown.
