  • 2 Tbsp. fat
  • 1 c. raw rice
  • 1 can stewed tomatoes
  • 1 small onion, minced
  • 1/2 green pepper, chopped
  • 2 tsp. salt
  • 2 tsp. chili powder
  • 2 c. water

Directions

    Brown rice in hot fat; add all ingredients.

    Add enough water to cover rice.

    Cover with lid; allow to simmer until rice is tender, about 30 minutes.

    Remove lid; continue to simmer until rice is allowed to dry out.

    Do not stir often or rice will become mushy.
