Mexican Enchiladas

  • 1 pkg. (12) corn tortillas
  • 2 cans tomato sauce
  • 2 cans Old El Paso refried beans
  • 1 pkg. Old El Paso Chili-O mix
  • 1 (2 lb.) pkg. mild Cheddar
  • 1 (1 lb.) pkg. Mozzarella
  • 1 medium onion

Directions

    Preheat oven to 400°.

    Put 2 cans of refried beans in a saucepan with a few slices of bacon for seasoning (you may need to add 1/2 to 1 cup of water if beans are too thick).

    Cover beans; let simmer.

    Dice onion and shred cheese.

    In a round pie pan, mix together the tomato sauce and Chili-O mix to taste.

    Lay tortillas, one at a time, in above mixture to cover both sides of tortilla.

    Place tortilla in a skillet with a small amount of grease and lightly fry tortilla on each side.

    Place on a plate until each tortilla has been fried.

    (Occasionally, you may need to add more grease to skillet.)
