Ingredients

  • 1 1/2 lb. ground beef (may substitute ground turkey)
  • 1 pkg. taco seasoning mix
  • 1 c. diced tomatoes (fresh or canned)
  • 2 (8 oz.) cans tomato sauce
  • 1 (4 oz.) can diced green chilies
  • 1 c. Ricotta cheese (may substitute cottage cheese)
  • 10 corn tortillas
  • 2 1/2 c. grated Monterey Jack cheese
  • 2 eggs

Directions

    In a large skillet, brown ground beef; drain fat.

    Add taco seasoning mix, tomatoes, tomato sauce and chilies.

    Blend well. Bring to a boil.

    Reduce heat and simmer, uncovered, 10 minutes. In small bowl, mix Ricotta and eggs.
