Ingredients

  • 1 lb. ground white meat skinless turkey
  • 1/2 c. chopped celery
  • 1/2 c. chopped onion
  • 1/4 c. chopped green peppers
  • 1 (14 oz.) can tomatoes
  • 1 (10 oz.) can enchilada sauce
  • 1/8 tsp. lite salt
  • 1 c. grated non-fat Cheddar cheese
  • 1 c. non-fat cottage cheese
  • 1 Egg Beater (1/4 c.)
  • 1/2 c. fat-free chicken broth
  • 8 corn tortillas
  • 1/2 c. grated non-fat Cheddar cheese

Directions

    Cook turkey meat in a bowl in the microwave about 5 minutes. Cover with wax paper, check and stir.

    Drain well.

    Combine next 3 ingredients and saute over medium heat in chicken broth.

    Add cooked turkey after vegetables are cooked.

    Add next 3 ingredients and stir well.

    Bring to a boil and reduce heat.
