  • 1 to 2 lb. ground turkey
  • 1 large can Mexicorn
  • 2 medium diced onions
  • 1 large can enchilada sauce
  • 2 to 4 tsp. cumin
  • 2 to 4 tsp. chili powder
  • 1 can tomato puree
  • 1 large can stewed tomatoes, drained
  • 1 c. grated sharp cheese
  • 1 c. grated Mozzarella cheese
  • 1 pkg. flour tortillas

Directions

    Brown turkey in heavy frypan and drain off all fat.

    Add onions and cook until transparent.

    Add all spices, Mexicorn, stewed tomatoes, puree and half enchilada sauce.

    Cook on low heat until mixture has thickened.
