- 1 lb. ground beef
- 1 (16 oz.) whole tomatoes, cut up
- 1 pkg. taco seasoning mix
- 1/2 can French fried onions (large can)
- 1 (12 oz.) cottage cheese
- 1 1/2 c. shredded Cheddar cheese
- 2 eggs, slighty beaten
- 12 (6 inch) flour or corn tortillas
Directions

1In large skillet brown beef; drain.

2Add canned tomatoes and taco seasoning.

3Stir in French fried onions.

4In bowl combine cottage cheese, 1 cup Cheddar cheese and eggs.

5Place 3 tortillas on bottom of greased baking dish 8 x 12 or 9 x 13-inches.

6Overlap 5 tortillas around sides of baking dish.

7Spoon meat mixture evenly in dish.

8Top with 3 tortillas, then with cheese mixture.

9Sprinkle with remaining Cheddar cheese.

10Bake covered with foil at 350°, lower at 325° if using glass pan, for 45 minutes.

11Let set 15 minutes before serving.
