Mexican Lasagna

  • 4 flour tortillas
  • 2 lb. ground beef
  • 1/2 c. chopped onion
  • 1 envelope taco seasoning
  • 2 cans diced tomatoes
  • 1 (15 1/2 oz.) can chilli with beans
  • 1 lb. shredded sharp Cheddar cheese
  • 3 eggs
  • 16 oz. Ricotta or cottage cheese

Directions

    Mix eggs and Ricotta.

    Set aside. Brown meats and drain. Add taco seasoning, onions and tomatoes. Cook for 10 minutes. Add chilli. Layer in a 9 x 12 baking dish 1/2 meat mixture, 2 tortillas, Ricotta and egg mixture and 1/2 the shredded cheese. Make two layers. Bake at 350° for 30 minutes. Let stand a few minutes before cutting. It freezes well.
