Ingredients

  • 2 lb. ground beef or turkey
  • 1 c. chopped onion
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 (10 oz.) jar enchilada sauce
  • 1 c. milk
  • 1 c. chopped black olives
  • 1 (4 oz.) can green chilies, chopped
  • 12 flour tortillas, sliced into 4 lengths
  • 2 c. Monterey Jack cheese
  • 2 c. Colby cheese

Directions

    In one container, mix olives, chilies, milk, soups and meat. Layer in a cake pan:

    1/4 sauce, 1/2 tortillas, 1/4 sauce, 1/2 cheese, 1/4 sauce, 1/2 tortillas, 1/4 sauce and 1/2 cheese.

    Cover pan with foil and bake at 400° for 30 minutes, uncover and bake an additional 30 minutes.
