- 1 1/2 lb. ground chuck
- 1 large onion, chopped
- 1 green pepper, chopped
- 2 fresh tomatoes, chopped
- 1 (10 oz.) can Ro-Tel tomatoes
- salt and pepper to taste
- 1 pkg. (12) corn tortillas
- 1 (16 oz.) can Ranch Style beans
- 1 lb. Velveeta cheese, thinly sliced
- 1 (10 1/2 oz.) can cream of chicken soup
Directions

1Brown meat with onion and pepper.

2Add tomatoes, salt and pepper.

3In a 9 x 13-inch pan, layer 1/2 each of the tortillas, meat, beans and cheese.

4Repeat layers.

5Top with soup.

6Bake at 350° for 35 to 40 minutes, until bubbly.
