Mexican Meat Pie

- 1 lb. hamburger
- 1/2 c. chopped onion
- 1 small can mushrooms
- 1 (10 oz.) can enchilada sauce
- 1/4 c. snipped parsley
- 2 tsp. cornstarch
- 1 pkg. ready made pie crust
- 3 eggs, beaten
- 1 1/2 c. shredded marble cheese
Directions

1In skillet, brown ground beef and onion; drain.

2Sprinkle with cornstarch; blend in enchilada sauce, parsley and drained mushrooms.

3Set aside.

4Put bottom crust in deep dish 9-inch pie plate.

5Spread half of eggs in crust.

6Spoon in meat mixture; top with cheese, then spread the rest of the eggs over cheese.

7Put on top crust; seal and flute edge.

8Cut slits in top for steam escape. Bake at 350° for 50 to 55 minutes.

9Let stand 15 minutes before cutting.
