  • 1/4 c. all-purpose flour
  • 1/2 tsp. salt
  • 1/4 c. butter or margarine, melted
  • 4 eggs, slightly beaten
  • 1 (4 oz.) can chopped green chilies
  • 1 c. cottage cheese
  • 2 c. (8 oz.) grated Monterey Jack cheese
  • 1 large ripe tomato, sliced

Directions

    Grease a 12-inch pizza pan; set aside.

    Preheat oven to 375°. In a medium bowl, combine flour, salt and melted butter or margarine.

    Stir in eggs, chilies, cottage cheese and Monterey Jack cheese.

    Pour evenly into greased pan.

    Place tomato slices on top. Bake 15 to 20 minutes in preheated oven until firm and lightly browned.

    Cut into thin wedges.
