- 1/4 c. all-purpose flour
- 1/2 tsp. salt
- 1/4 c. butter or margarine, melted
- 4 eggs, slightly beaten
- 1 (4 oz.) can chopped green chilies
- 1 c. cottage cheese
- 2 c. (8 oz.) grated Monterey Jack cheese
- 1 large ripe tomato, sliced
Directions

1Grease a 12-inch pizza pan; set aside.

2Preheat oven to 375°. In a medium bowl, combine flour, salt and melted butter or margarine.

3Stir in eggs, chilies, cottage cheese and Monterey Jack cheese.

4Pour evenly into greased pan.

5Place tomato slices on top. Bake 15 to 20 minutes in preheated oven until firm and lightly browned.

6Cut into thin wedges.

7Makes 16 to 18 appetizer servings.
