  • 10 flour tortilla shells
  • 3 Tbsp. oil
  • 2 cans kidney beans (16 oz. can)
  • 1/2 c. reserved juice (from beans)
  • 2 c. taco sauce (mild)
  • 2 c. corn, drained
  • 2 c. Mozzarella and Monterey Jack cheese, grated

    Oil shells lightly.

    Put into 375° oven until crisp.

    Layer in single layer on 2 cookie sheets.

    Mash beans.

    Put in hot skillet with 1 tablespoon oil and reserved juice.

    Fry until juice is absorbed (3 to 5minutes).

    Layer while hot onto shells.

    Spread with taco sauce.

    Sprinkle on corn and cheese.

    Broil 3 to 5 minutes until cheese is melted and lightly brown.
