- 3 lb. lean pork
- 3 large onions, chopped
- 6 to 8 c. chopped tomatoes
- 2 (28 oz.) cans hominy
- 1/4 to 1/2 c. chopped green chilies
Directions

1Cut pork into small cubes.

2Brown on all sides in large skillet.

3Add onions and saute until golden brown.

4Add tomatoes, hominy and green chilies.

5Mix gently.

6Cook, covered, over low heat for 3 hours, stirring occasionally.

7May cook uncovered for 30 minutes to reduce liquid, if desired.

8Yields 18 to 20 servings.
