Mexican Potato Skins

Ingredients

  • 4 potatoes
  • 3 Tbsp. butter
  • 3/4 tsp. chili powder
  • 1/4 tsp. salt
  • 1/2 c. chopped onion
  • 1 medium tomato, chopped
  • 1/2 c. sliced olives
  • 1 c. Mozzarella cheese
  • 1 c. Cheddar cheese
  • 3 Tbsp. taco sauce
  • sour cream (set aside)
  • guacamole (set aside)

Directions

    Bake potatoes.

    Cut into halves and scoop out insides.

    Brush with butter and broil.

    Sprinkle with chili powder, salt and onion. Broil 3 to 4-inches from heat for 8 minutes until edges are crispy. Remove and top with the rest of ingredinets.

    Broil until cheese melts.

    Top with sour cream and guacamole sauces.
