Mexican Potatoes

  • about 3 lb. red potatoes
  • 1 large onion
  • 1/2 c. bell pepper
  • 1/4 tsp. garlic powder
  • salt and pepper to taste
  • 2 tsp. chili powder
  • 1/2 c. taco sauce or salsa
  • 2 c. oil

Directions

    Wash potatoes and scrub them.

    Dice in fairly large pieces. Fry in very hot oil until almost done.

    Add onion, bell pepper, garlic powder and chili powder and cook until done.

    Drain oil off and add taco sauce.

    Cook a few minutes longer, stirring to mix sauce in.

    You can sprinkle grated cheese over the top if you want to.

    It's very good.
