- 1 can (7 oz.) whole green chiles
- 2 c. grated Cheddar cheese
- 1 c. Monterey Jack cheese, grated
- 8 eggs
- 1 1/2 cans evaporated milk
- salt and pepper to taste
- 1 bunch green onions, chopped
Directions

1Split chiles and cover bottom and sides of casserole.

2Spread cheese over chiles.

3Stir eggs into milk.

4Season with salt and pepper.

5Pour over cheese.

6At this point, mixture may be refrigerated overnight. When ready to bake, top with green onions. Bake at 350° for 1 1/2 hours, or until it bubbles and puffs up.
