- 2 c. long grain rice
- 4 c. water or chicken broth
- 1/2 tomato, diced
- 1/2 small onion, diced
- 1 can tomato sauce
- 1/2 c. oil
Directions

1Wash rice in a small bowl and drain.

2In a medium skillet, heat oil and add rice, stir until rice is a golden brown.

3Add diced tomatoes and onion; stir for about 1 minute or 2.

4Add tomato sauce and water or chicken broth. Season with garlic and salt to taste. Reduce heat and cover until rice is done.
