- 1 chopped onion
- 1 Tbsp. parsley
- 2 1/2 c. chicken broth
- 1 tsp. salt
- 1/4 c. oil
- 1 garlic clove
- 1 jalapeno chile, minced
Directions

1Fry rice in hot oil with onion and garlic until lightly browned.

2Drain off oil.

3Add boiling broth, parsley, chile and salt.

4Cover tightly and simmer for 25 minutes without lifting the lid.

5Serve with any main dish.
