- 16 ounces salsa
- 11 ounces mexicorn (whole kernel corn with red & green peppers)
- 1 12 cups water
- 1 teaspoon chili powder
- 1 12 cups uncooked instant rice
- 1 cup shredded monterey jack cheese
Directions

1Brown ground beef in lg skillet, drain.

2Stir in salsa, corn, water and chili powder, bring to a boil.

3Stir in rice.

4Cover, remove from heat.

5Let stand 5-7 min or until liquid is absorbed.

6Fluff mixture with fork, sprinkle with cheese.
