- 1/2 c. chopped bell pepper
- 1/4 c. chopped onion
- 1 clove garlic, minced or 1 tsp. garlic salt
- 1/4 tsp. dried basil, crushed
- 1/2 tsp. dried rosemary
- 2 tsp. olive oil or cooking oil
- 1 c. long grain rice
- 1 c. chopped, peeled tomatoes
- 1 tsp. salt
- 1/8 tsp. pepper
Directions

1In a skillet, cook green pepper, onion, garlic, basil and rosemary in hot oil until vegetables are tender.

2Stir in rice, chopped tomato, salt, pepper and 2 cups water.

3Cook covered over low heat for about 20 minutes or until rice is done.

4Makes 6 servings.
