- 1 c. uncooked regular white rice
- 2 Tbsp. shortening
- 1 medium onion, finely chopped
- 1 medium green pepper, finely chopped
- 2 tsp. chili powder
- 2 tsp. salt
- 1 c. canned tomatoes
- 1 c. boiling water
Directions

1Wash and dry rice between towels.

2Heat shortening in heavy skillet over medium heat (325° to 350°) on controlled burner.

3Add onion.

4Cook, stirring frequently, until rice is browned and onion is tender.

5Add remaining ingredients.

6Cover and bring to a boil; reduce to low heat (175° to 200°).

7Cook for 30 minutes. Makes about 6 servings.
