- 1 small green pepper, chopped
- 1 small onion, chopped
- 1 Tbsp. oil
- 1 (10 oz.) pkg. frozen corn, thawed
- 1 c. mild salsa
- 1 c. chicken broth, defatted
- 1 1/2 c. Minute rice
- 1/4 c. shredded Cheddar cheese (optional)
Directions

1Cook and stir green pepper and onion in oil until tender but not browned.

2Add corn, salsa and broth.

3Bring to a boil.

4Stir in rice.

5Cover and remove from heat.

6Let stand 5 minutes.

7Add cheese, if desired.

8Fluff with fork.
