- 1/2 c. chopped onion
- 1/4 c. diced carrot
- 2 cloves garlic, minced
- 1 Tbsp. oil
- 3/4 c. long grain rice
- 1/2 c. water
- 1/2 c. picante sauce
- 1 (10 oz.) can diced tomatoes and green chilies
Directions

1In medium saucepan, saute onion, carrot and garlic in oil for 3 minutes.

2Add rice; cook and stir 1 minute.

3Stir in water, picante sauce and diced tomatoes and green chilies.

4Cover; reduce heat to low.

5Simmer for 20 to 25 minutes, or until all liquid is absorbed and rice is tender.

6Let stand, covered, for 5 minutes. Serves 4.
