Ingredients

  • 1 c. rice
  • 2 Tbsp. cooking oil
  • 1 garlic clove
  • 1 medium diced onion
  • 2 diced green chilies
  • 1/4 c. diced celery
  • 2 medium fresh tomatoes, diced
  • 1 1/2 c. beef stock
  • 1 small can tomato sauce

Directions

    Brown rice in cooking oil until light brown.

    Add onion, tomatoes, chilies, celery, garlic, beef stock and tomato sauce. Stir.

    Add salt and pepper to taste.

    Bring to a boil, then simmer until rice is soft and all moisture is removed.

    Add water if needed.
