- 1 c. rice
- 2 Tbsp. cooking oil
- 1 garlic clove
- 1 medium diced onion
- 2 diced green chilies
- 1/4 c. diced celery
- 2 medium fresh tomatoes, diced
- 1 1/2 c. beef stock
- 1 small can tomato sauce
Directions

1Brown rice in cooking oil until light brown.

2Add onion, tomatoes, chilies, celery, garlic, beef stock and tomato sauce. Stir.

3Add salt and pepper to taste.

4Bring to a boil, then simmer until rice is soft and all moisture is removed.

5Add water if needed.
