- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 c. rice, uncooked (Uncle Ben's converted long grain, not instant rice)
- 1/2 c. thick salsa
- 2 Tbsp. olive oil
- 1/4 tsp. cumin
- 1/2 c. water
- 2 c. cheddar cheese
- 1 can (16 oz.) diced tomatoes
- 2 c. cooked meat, hamburger or chicken
- 1 (14 oz.) can broth, beef or broth
Directions

1Saute onion in oil. Add garlic, cumin and rice. Cook 3 minutes on medium heat. Add meat and remaining ingredients except cheese. Bring to a boil. Cover and bake at 350° for 25 minutes or until rice is soft. Sprinkle with cheese and heat uncovered in oven for 5 minutes or until cheese is melted.
