- 1 lb. or more pork sausage (according to taste)
- 1 large onion, chopped
- 3 c. water
- 1 c. rice
- 1 tsp. salt
- 1 1/4 oz. chili seasoning mix
- 1 (15 oz.) can kidney beans, drained
Directions

1Cook onion and sausage in a skillet over medium heat until onions are tender, but not brown.

2Drain.

3Add water, rice, salt, seasoning mix and beans.

4Bring to a boil and reduce heat.

5Cover tightly and simmer at least 20 minutes.

6Stir occasionally. Remove from heat; let stand 5 minutes or until most of liquid is absorbed.

7Makes 6 servings.
