- 3 slices bacon
- 3 c. drained corn
- 1/2 c. chopped bell pepper
- 1/4 c. finely chopped onion
- 1/4 c. chopped pimiento
- 1/4 tsp. chili powder
- 1/2 tsp. salt
- 1/8 tsp. pepper
Directions

1Fry bacon until crisp.

2Remove from drippings, drain, crumble and set aside.

3Add vegetables and chili powder to drippings. Stir, cover and cook over low heat for 15 to 20 minutes or until corn is tender.

4(Stir occasionally to keep from sticking.)

5Add salt and pepper; mix well.

6Pour into serving dish; sprinkle with crumbled bacon.

7Serve hot.
