Mexican Skillet Corn

  • 3 slices bacon
  • 3 c. drained corn
  • 1/2 c. chopped bell pepper
  • 1/4 c. finely chopped onion
  • 1/4 c. chopped pimiento
  • 1/4 tsp. chili powder
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Directions

    Fry bacon until crisp.

    Remove from drippings, drain, crumble and set aside.

    Add vegetables and chili powder to drippings. Stir, cover and cook over low heat for 15 to 20 minutes or until corn is tender.

    (Stir occasionally to keep from sticking.)

    Add salt and pepper; mix well.

    Pour into serving dish; sprinkle with crumbled bacon.
